Aubergines are a vegetable belonging to the Solanaceae family. They are typically elongated pear-shaped, and their main colour is dark purple. The skin of aubergines is shiny and smooth, as well as edible. It should be noted that their flavour is mild and somewhat earthy and they have a high water content, making them low in calories.

Aubergines are best preserved at around 10ºC. Avoid placing it too early, as it is a vegetable that oxidises and darkens quickly, causing it to deteriorate more rapidly.

They are believed to have originated in the region from India to China. There are many varieties of aubergines, and although the most common is the purple one, there are other green or even striped ones.

In Chinese culture it is a symbol of prosperity and wealth.
