For a proper ripening of the avocado, leave it at room temperature before refrigerating it. A whole, green avocado takes about 7 days at 18-24°C without sunlight.

Speed up the process by storing it in a paper bag for 4 days. If it is cut, it oxidises quickly, so protect it with lemon juice and join the halves together.

The seed inside reduces oxidation. Wrap the fruit in cling film to maintain freshness.

The avocado, native to Mexico and Guatemala, is an edible berry that is cultivated in tropical and Mediterranean climates around the world due to its high demand. Its shape varies from oval to pyriform, with sizes ranging from 7 to 33 centimetres long and up to 15 centimetres wide. The peel can be green to dark purple, smooth or slightly rough. The flesh may be green or yellow, and contains a large ivory-coloured stone 5 to 6.4 centimetres in size. Up to 8 varieties of avocado have been identified.
