Cashew

The cashew nut is an edible seed found at the lower end of the “Cashew Apple”. It is characterised by its hard shell and mild, creamy taste.

It develops at the lower end of a pseudo-fruit called the pine nut. The seed is contained in a hard, tough shell.

Cashews are rich in nutrients and provide a good source of healthy fats, protein, fibre, vitamins and essential minerals such as magnesium, phosphorus and zinc. They are rich in fibre and B vitamins. In addition, some of their compounds have anti-inflammatory properties.

Originally from Brazil, cashew nuts found their way to India, where they are widely used, by Portuguese colonisers. Since then, India has become a major producer and consumer country.
